CHRISTMAS CLAM CHOWDER
4 medium size red potatoes, unpeeled and diced small
1 small carrot, peeled and shredded
1 onion, diced small
3 cups water
2 teaspoons chicken bouillon powder
1 teaspoon dried parsley
1/4 teaspoon black pepper
3 tablespoons all purpose flour
1/2 cup water
2/3 cup Velveeta cheese
3 small cans chopped clams, drained
12 ounces evaporated milk
In a large pot add potatoes, carrot, onion, 3 cups water, bouillon, parsley and pepper. Bring to a boil,
lower heat to a simmer, cover and cook about 20 minutes or until potatoes are tender. Stir
together flour and 1/2 cup water until dissolved and add to chowder. Bring to a boil and stir
until chowder has thickened. Lower heat and add cheese and clams. Stir until cheese is melted.
Add milk and heat through. Chowder does thicken as it cools.
